Chicken Afritada 

I posted Pork Sisig yesterday and that was our lunch last Sunday. Here’s the dinner — Chicken Afritada. All kind of meat can be cooked in tomato sauce and we Filipinos call it different ways. 

  1. Pork = Menudo
  2. Beef = Caldereta or Mechado
  3. Fish = Salciado 
  4. Chicken = Afritada

Although you can mix and match them, these meat tastes better in their respective common cooking ways.

  1. Chicken (Whole or Specific Part)
  2. Potatoes, Carrots, Baguio Beans, Bell Pepper
  3. Tomato Sauce
  4. Onion & Garlic
  5. Salt Pepper & Sugar (to taste)
  6. Fish Sauce

How to cook

  1. Make sure you thoroughly clean the chicken and you washed your hands and utensils right away. We don’t want salmonela.
  2. Sear the chicken until skin is golden brown. Set aside. 
  3. Sauté garlic and onion. Add back the chicken.
  4. Add fish sauce, pepper and 2 cups water.
  5. Simmer.
  6. Add tomato sauce.
  7. Simmer. Add sugar.
  8. Add potatoes and carrots (you may fry them separately to reduce cooking time)
  9. After 10 minutes add the beans.
  10. After 5 minutes add bell pepper.
  11. Serve with rice.

No leftover. lol
