Own Cooking: Chicken Adobo

It’s my first time to post food that I cooked myself. I forgot to mention that I cook a lot, I am the who prepares food for my family. My dad got me into kitchen since I was like 11, I think.

I cooked Chicken Adobo. Adobo is one of the famous home grown recipe in the Philippines but I gave it a little twist.

Every person has their own way of cooking it. Some marinate the meat first, other sautés. I know both trick. For chicken, sauté is better. I like to sear it first to get rid of the excess oils from the skin. Then I will sauté garlic and onion.

Let me enumerate the ingredients first before I continue telling you how I cooked it. I am not good with measurements so please bear with me. Winking smile

  • chicken 
  • minced garlic
  • chopped onions
  • 1/2 c soy sauce
  • 3 tbs. sugar cane vinegar
  • 1 tsp. black pepper
  • 2 bay leaf
  • 1 tbs. sugar
  • 1 tsp. all spice
  • 1 c. water

After searing and sautéing add soy sauce, black pepper, cup of water, and the bay leaf. Let it simmer, add vinegar. Do not stir/mix (that’s my dad’s tip when adding vinegar in this dish). Continue to simmer until the meat is tender. Taste and add ingredients that are lacking (it could be salt). Add sugar and the all spice (this mixed herbs is perfect for chicken).  Let it simmer once more.

You can stop right here if you want to make it saucy.

I want to reduce the sauce and fry the chicken on its own oil. I add chili sometimes for a little kick.

You can also add pineapples, potatoes. and eggs if you wish. You can also combine it with pork.
