I believe I mentioned on my earlier entry that I will show you how to cook Kaldereta a.k.a Spicy Stew. It’s one of the traditional Filipino dishes which sounds a little complicated but very easy to cook. Thanks to the ready-made mixes available in the grocery cooking Kaldereta is easy as 1-2-3.
Of course I will tell you the traditional way.

Kaldereta
This dish was adapted from a Spanish dish, they used goat meat, tomato paste, and liver spread. Sometimes cheese and chili is added for intense flavor. But goat meat is not really welcome for common family dinner so we use Beef, Pork, or chicken instead.
Ingredients:
- Beef Spareribs
- Tomato Paste
- Onion
- Garlic
- Bell Pepper
- Liver Spread
- Cheese
- Green Peas or Garbanzos
- Potatoes
- Carrots
Be sure the meat is tender before sauteing and adding the rest of the ingredients. This will take 45 mins. – 1 hour cooking time but it’s worth it.
Kare-kare is still harder to prepare than this one.
